Our Journey
I would like to take some time to introduce ourselves and our company. I am Lori Finch and my daughter Gabby Bell have started Gabby’s Gluten Free Goods. We are a new small business specializing in gluten free baked products. We have our home food processing establishment license and bake in a dedicated gluten free kitchen.
I was diagnosed with Celiac disease in 2019. Before the diagnosis I was battling painful achy joints from inflammation as well as migraines. My energy level was nonexistent. Blood tests showed my iron and vitamin levels were low from the inability to absorb the nutrients due to Celiac disease attacking part of my digestive system.
I have loved to bake my whole life and have always enjoyed creating new baked goods. I was devastated to think I could no longer bake the way I knew how. I started buying different gluten free baked products so I could feel like I wasn’t being deprived of what I love. I was not happy with the products I had purchased because they were not what I considered “normal” baked goods. I decided that I was going to have to create my own gluten free products. My poor family had to endure the many test product flops I made, which often times ended up in the trash can. I finally discovered the correct flour blend for my gluten free baking and was determined to bake products that taste so good nobody would suspect they were gluten free.
I have shared my products with many people who could eat gluten and they were amazed at the taste and texture. Most would not know the baked goods were gluten free. I would love to share my success in baking with all of you who are wanting good tasting, great quality gluten free products.
